March Menu

Well. I've learned my lesson for real this time. I HAVE to buy everything at the beginning of the month. If I don't, I run around like a crazy lady trying to get things together. And I rearrange the menu a trillion times. I miss out on a lot of good recipes. I'm not goofing around this time. It's ON in March!

Great (new) meals from February include: The French Toast Bake. Next time I will make it without the cream cheese and fruit though. Tasted good, but the consensus was that it was too mushy. Also, the Bacon Ranch Chicken is killer! And the Italian Chicken Pasta was also finger-lickin' good!

The Honey Mustard Pretzel Chicken was "yum-bo" as my Mom likes to say. But. We all agreed that we liked the honey mustard sauce from World's Best Chicken better. The breading was also a turn-off to the kids, so I'll probably stick with World's Best. It's easier. :)

Things that were nasty: Meatball Stuffed Biscuits. No one liked them. But the worst by far were the Spinach Enchiladas. I took one bite and threw them all out. And for all that, it took me TWO HOURS to make them and the recipe was a joke. Not a single cooking time or temp. Lame.

March is the month of Roll-ups. Can't tell you why, exactly, but it happened. It's also heavy on Italian dishes, which I can't explain either. But there it is. I also added a few side dishes to the list. We'll see how that works out for me.

Can I just say, two holidays in one month is not right. "Ain't nobody got time for that!" I don't have any Easter dishes because I am assuming at this point, that I won't be cooking. I have no reason to think that, but I'm going with it for now. :) For St. Patty's Day, I'm just doing Lucky Charms for breakfast with green milk. I will also make a couple treats. No dinner that night though.

So, without further ado...the meals.

1. Chicken Roll-ups I have made these before and suggest skipping the cream of chicken soup topping. This time I am going to brush the rolls with butter (or olive oil) and sprinkle them with Italian seasonings. Then top with shredded cheese.
2. Corndog Muffins with Corn, Bacon, and Scallions
3. The World's Best Chicken with Potato Chive Pancakes
4. Calzone and Buffalo Chicken Garbage Bread
5. Ramen Noodle Salad
6. Soba Noodles with Ginger and Sweet Scallions
7. Bacon Cheeseburger Soup (CP)
8. Crowd Pleaser Chicken (CP)
9. Pot Roast (PC) - Brown roast in pressure cooker. Mix 1 packet Ranch, 1 packet Zesty Italian, 1 packet Brown Gravy, 1 can beef stock, worcestershire sauce to taste. Pour over roast, then cook on low for 45 minutes. Add Potatoes, onions, and carrots and continuing cooking for another 15 minutes. Enjoy!

20. Lasagna Roll-ups
21. Margie's Pot Roast Enchiladas - made from left over pot roast meat. Add wilted spinach, cheese, black beans, onions, and any other items you choose. Cover with green enchilada sauce and cheese.
22. Hamburgers!
23. Kielbasa and Pesto Penne

I have a feeling that once I finally do meet you (in person) I will need to always have a notebook.
