Veggie Soup Recipe

While I'm on the recipes...in November I did a post about the kids making Veggie Soup with their Grammy. A few of you asked for the recipe...but I'm lame, so I never posted it. Better late than never though right? :)


serves 8-10.
1 can (14.5 oz.) cut green beans
1 can (14.5 oz.) cut wax beans
1 can (14.5 oz.) whole new potatoes, cut into cubes
1 can (15.25 oz.) corn
1 can (8.25 oz.) sliced carrots
1 can (14.5 oz.) zucchini with italian style tomato sauce
2 cans (14.5 oz. each) diced tomatoes with basil, garlic, and oregano
3 cans (14 oz. each) chicken or beef broth
drain liquid from all vegetables except zucchini and tomatoes.

Combine all ingredients in a 5-qt. pot. Bring to a boil. Reduce heat and simmer 3 minutes (or longer, if desired, but don't let it get mushy.)


This soup may not be the Pasta e Fagioli, but it's yummy. And it's so easy and cost effective. Your kids can help you make it, and you can easily buy multiples of all the canned goods to have them on hand for a last minute meal. Great for food storage too. :) Enjoy!

i have really never had a better vegetable soup than this one. so easy, so fast, so good.
