Buffalo Wing Soup and Missionary Meatloaf

We've found another successful recipe. Buffalo Wing Soup from the Crock-Pot Lady! Oh my. We love anything buffalo flavored, with the exception of actual buffalo. :) So this was right up our alley. If you like the buffalo flavor, I guarantee that you will love this soup!

Missionary Meatloaf
from "The Essential Mormon Cookbook" by Julie Badger Jensen

ingredients
2 lb ground beef
2 eggs, beaten
1 cup bread crumbs
1/2 cup chopped onion
1/2 cup grated carrot
1/2 cup ketchup
1/2 cup milk
1 tsp salt
1 tsp pepper
1 tsp dried thyme
1 tsp dried sage
1/2 lb bacon strips, uncooked

In a large bowl combine all ingredients except bacon and meatloaf sauce. Mix well. Place in greased 9x6-inch loaf pan. Cut bacon strips in half and place over top of meatloaf to cover. Bake at 350 degrees for 1 hour. remove from oven and drain off excess juices. Spoon on enough meatloaf sauce to cover top. Reserve additional sauce for passing. Return to oven and bake for about 20 minutes or until meatloaf is done. Let stand for a few minutes before cutting. Makes 8 servings.

meatloaf sauce:
2 cups ketchup
2 cups brown sugar

Place ketchup and brown sugar in a bowl. Heat in microwave. Stir until blended.

*We found that if we cut the sauce recipe in half it is the perfect amount. Otherwise, we had A LOT of sauce leftover. And we don't skimp on sauce. I also don't use a full 1/2 lb of bacon. Just a couple strips. I have also made it without the bacon and it is still good.

Wow...I never realized it, but this must have been where I got the recipe for the meatloaf when the kids were growing up...I used to have to make a "vat" of this sauce because Eli's dad just LOVED it!!!! HAH...it was a Mormon meatloaf recipe....interesting....well! good for me....

This sounds yummy honey...thanks for sharing!!! One day, we'll have to try actual buffalo, just to see if we actually like it....

i can vouch for the smell of the meatloaf, at least. i didn't actually eat any of it, but it smelled divine. abby has been quite the cook lately. not sure where that gene came from.
